Tea recipes
Lattes, cold brews and iced lattes. Every one starts with the same five-minute concentrate.

The concentrate
One brew, three drinks.
- 1One teabag, or 4g of loose leaf, in a cup.
- 2Cover with about 60ml of boiling water, just enough to soak the leaf.
- 3Leave it five minutes. Strong is the point.
- 4Take the bag out and build your drink on it: warm milk, ice and water, or ice and milk.

Tea latte
Warm milk on a strong brew.
- Make the concentrate in a mug.
- While it brews, warm 200ml of milk and froth it if you can.
- Pour the milk over the tea and stir gently. Sweeten if the blend wants it.
Blends that love milk: TwentyFourSeven, Classic Earl, Banana Shake, Crème Brewlée, Gingerbread Man, Propermint, Brewdolph, Christmas Cake, Yule Log.
Oat and dairy suit most of these. Coconut and almond taste sweeter, so skip the sugar.

Cold brew
The concentrate, over ice.
- Make the concentrate.
- Fill a tall glass with ice and pour the tea over it.
- Top up with cold water, or sparkling water for a fizz, and stir. Add a slice of whatever the blend suggests: lemon, lime, mint.
Blends that shine cold: Classic Earl, Refresher Green, Lemon & Ginger, Propermint, Super Berries, Rhubarb & Custard, Mulled Wine.
Fruit and herbal blends can sit as long as you like. They have no tannins, so they never turn bitter.

Iced latte
Ice and milk, for the dessert blends.
- Make the concentrate and let it cool for a minute.
- Fill a glass with ice.
- Pour the tea over, top up with cold milk and stir. A drizzle of honey turns it into pudding.
Made for it: Banana Shake, Crème Brewlée, Gingerbread Man, Yule Log.
Brewed in milk instead: Sleep, Detox. Infuse the teabag in hot milk for three to five minutes and top with froth.
